Say cheese! Start 2018 with an impressive cheese board

Make an eye-catching, tasty, epic cheese board to ring in the New Year!

Whether small or large gathering, this is an easy appetizer to put together that will wow your guests with healthy, fresh ingredients of your choosing.

Start with a serving board — wood, marble, slate or a large 12 x 12″ piece of travertine tile, plus tiny bowls, cheese knives, appetizer forks and spoons.

Let’s talk cheese:

You want to choose and serve a variety of fresh cheeses with flavor and texture.

Soft: mozzarella, brie or burrata, whipped cream cheese

Semi-soft: Gogonzola, Fontina, Roquefort

Semi-hard: Swiss, provolone

Hard: Pecorino, Asiago, cheddar

Add crackers, bread sticks, crostini, water crackers and CHEESE CRISPS* (see recipe below).

Fill small bowls with olives, nuts (blanched almonds, pistachios, walnuts, candied pecans), local honey or pesto spread. Add fruit such as grapes or sliced pear, cornichon pickles. Add dried fruits, apricots, cranberries, dates or figs.

Add uncured meats such as prosciutto, salami and smoked salmon (hence the whipped cream cheese).

Arrange: Place directly on board or a sheet of parchment paper on top of board, then arrange selection of ingredients. Add a touch of fresh rosemary sprigs for garnish and scent.

/14 cup shredded cheddar cheese

1/4 cup shredded Parmesano-Romano

Olive oil spray


Preheat oven to 350F degrees. Line a baking sheet with parchment paper; lightly spray with olive oil spray.

Drop a tablespoon of shredded into separate piles, leaving a 2-inch space between; flatten the top.

Bake in center of oven for 5-6 minutes, until golden brown (watch carefully).

Remove from oven, cool for 10 minutes, then carefully loosen with a metal spatula.
