Summer is not complete without a homemade peach crisp. Made from fresh ripe peaches and a kick of flavor from ginger to spice things up.

Peach Ginger Crisp

Serves 6

INGREDIENTS

Filling:

2 cups sliced fresh peaches

1/4 cup packed light brown sugar

1 tablespoon crystallized ginger

Topping:

1 cup old-fashioned rolled oats

1/4 cup all-purpose flour (or substitute gluten-free baking flour)

1/4 cup packed light brown sugar

1/8 teaspoon salt

1-2 tablespoons canola oil

PREPARATION

Preheat oven to 350-degrees F. Coat a shallow 9-inch baking dish with coconut oil spray. Prepare filling: toss peaches with brown sugar and ginger. Transfer to prepared baking dish, spread to an even layer.

Prepare topping: Combine oats, flour, brown sugar and salt in a medium bowl. Drizzle oil, stir to combine until evenly moistened. Sprinkle topping over peaches.

Bake until fruit is bubbly and topping lightly browned, about 40-45 minutes.

Let cool completely; sprinkle with confectioners’ sugar.
