A simple dish, easy to make, perfect to serve as a main or side to grilled meat or fish. Combine the freshest ingredients for a farm-to-table meal, full of flavor that will surely impress!
Zucchini Noodles Primavera
Serves 4
4 medium zucchini, spiraled
1 cup grape tomatoes, variety of shape and color, sliced in half
1 pint button mushrooms, wash well, sliced
1 large clove garlic, minced
1/2 cup sliced red onion
4-6 leaves fresh basil
Pinch red pepper flakes, optional
Sea salt, freshly ground pepper
Freshly grated Asiago cheese
Wash and dry zucchini. Using a Veggetti TM, follow directions to achieve strands, set aside into a paper towel-lined colander.
Set a deep skillet over medium-high heat, drizzle with olive oil. Add garlic, onions, tomatoes and mushrooms; sauté, frequently stirring, until vegetables are tender.
Reduce heat to low, add noodles on top, cover and cook for 8-10 minutes.
Remove from heat, add red pepper, sea salt and fresh ground pepper; gently toss noodles to combine.
Twist noodles around a fork, place in the center of plate, top with Asiago cheese; serve.
