Oranges are in season and packed with vitamin C, which is great for the immune system. Avocados, loaded with vitamin E, are a healthy fat that helps to lower cholesterol levels. Walnuts contain omega-3 fatty acids, which are beneficial to your heart and brain. Turmeric is a spice known for its anti-inflammatory properties and health benefits. Arugula contains calcium, vitamins and iron not found in iceberg lettuce. Try this zesty winter salad to wake up your hibernating taste buds!
Arugula, orange and avocado salad with citrus-walnut vinaigrette
1/2 cup orange juice
1/4 cup fresh lemon juice, squeeze 2 lemons
1 tbsp. lemon zest (wash fruit very well before making zest, then finely chop)
1 tbsp. local honey or agave nectar
1/4 cup organic apple cider vinegar
1/4 tsp. turmeric
1/4 cup extra-virgin olive oil
1/4 walnuts, chopped
Sea salt, freshly ground black pepper
To prepare vinaigrette, combine orange and lemon juice, zest and honey in a non-reactive glass or stainless bowl. Add the vinegar and turmeric. Slowly whisk in olive oil, add walnuts. Season with salt and fresh ground black pepper. Set aside.
1 orange, slice peel and pith completely off; slice 1/8″ thick, then into halves
1 avocado, peeled, pitted and diced
2 cups baby arugula
Place orange and avocado in another bowl. Add vinaigrette and toss gently to coat. Arrange arugula on salad plates, top each with orange avocado mixture.
