Make enough dough recipe for a single crust. This pie has no top.
Filling
3 large eggs
1/2 cup brown sugar
1/2 cup white granulated sugar
1/4 teaspoon salt
2 cups cooked and mashed carrots
1 1/2 teaspoon vanilla extract
1/2 tablespoon of cinnamon
1/4 teaspoon cloves
2 tablespoons of flour
one can of evaporated milk.
Preheat oven to 400 degrees. In a bowl, whisk the eggs until they foam, add the sugars and salt until they are dissolved. Then add all of the other ingredients and mix well. Pour it all into the unbaked pie shell and bake for 50 minutes or until a knife inserted comes out clean.
