Treat your favorite ghosts and goblins to a homemade batch of pumpkin granola!
Every bite is full of the perfect fall flavors -- made with good-for-you, natural ingredients like real pumpkin, pure rolled oats, coconut, walnuts and pumpkin seeds, spiced up with cinnamon and sweetened with maple syrup and dried fruit.
Enjoy granola sprinkled onto Greek yogurt or in a bowl with your favorite milk.
Yield: 4 cups
Serving: 1/2 cup
2 tbsp virgin coconut oil
1/2 cup maple syrup
1/2 cup pumpkin puree (not pie filling)
3 cups old-fashioned rolled oats (do not use quick)
1/2 cup coconut flakes
1 tsp ground cinnamon
1/8 tsp Himalyan salt
1/2 cup unsalted walnut pieces
1/2 cup pepitas -- green pumpkin seeds without white outer hull
1/2 cup chopped dried fruit of your choice- apricots, Medjool dates, raisins
Preheat oven to 300ºF. Line a baking sheet with parchment paper; set aside.
In a large bowl, mix together oats, coconut flakes, cinnamon and salt.
Heat oil in a small saucepan over low heat until it melts. Stir in maple syrup and pumpkin, remove from heat and whisk to combine.
Pour melted oil mixture over dry ingredients and stir to coat. Spread mixture into an even layer on a lined baking sheet. Bake granola in oven for 10 minutes, stir in walnuts and pumpkin seeds and bake another 5-7 minutes until golden brown.
Remove from oven, allow to cool and crisp up. Once cooled, add dried fruit.
Store in air tight container for up to 2 weeks.
