GOLDEN OATMEAL COOKIES with RAISINS & PECANS
Yield: 24 cookies
1 cup (1 stick) unsalted
3/4 cup pure coconut sugar
1 large egg, free range or cage free
1 Tsp pure vanilla extract
1/4 cup creamy almond butter
3/4 cup all-purpose flour
1/2 Tsp baking soda
1/4 Tsp fine salt
1 Tbsp chia seeds
2 cups old fashioned oats
8 - 10 pecans, break by hand into pieces
3/4 cup golden raisins
Preheat oven to 350ºF; line 2 (16 x 12-inch) baking sheets with parchment paper.
In a medium bowl, beat butter and sugar using a hand mixer, until creamy.
Add almond butter and mix well to combine.
In a large bowl, add flour, baking soda, salt and chia seeds; whisk together. Add wet mixture to dry, and using a large spoon, combine. To that, add oats, pecans and raisins, mix well (again by hand using a large spoon) combining all ingredients.
Drop dough, using a small cookie scoop, 1 1/2-inches apart so you have 12 cookies on each lined baking sheet.
Bake one sheet at a time for 10 - 11 minutes, until lightly golden. Do not over bake! ( I always find the second sheet bakes quicker, so take a peek at 9 - 10 minutes).
Cool for 5 minutes; carefully transfer cookies to a wire rack.
