Strawberries appear every mid-June at Kimball Fruit Farm, just as they have for many years. Kimball Fruit Farm offers fresh picked strawberries at their farm stand and 'pick-your'own, in season. What a great way to spend an afternoon with family or friends...picking your own naturally sweet berries to savor.

Strawberries promote good health, offering wonderful nutritional benefits. Add them to your diet for their antioxidant and anti-inflammatory properties to help lower the risk of cariovascular disease and bad cholesterol. Slice and top your morning oatmeal, cereal or yogurt. Try them on a salad. Add to a smoothie or make strawberries the star of a delicious dessert (see below for recipes).

Power Strawberry Smoothie

Serves 1

INGREDIENTS

1 cup unsweetened almond milk

1 cup fresh strawberries, rinsed, hulled, halved

1/4 avocado

1 teaspoon ground flaxseeds

1 teaspoon chia seeds

2 raw walnuts

2 ice cubes

PREPARATION

Blend all ingredients until smooth.

Paleo Strawberry-Almond Crisp

Serves 6

INGREDIENTS

For Topping:

1 cup almond flour

Pinch teaspoon sea salt

3 tablespoons coconut oil

2 tablespoons local honey

For Filling:

4 cups fresh strawberries, rinsed, hulled and sliced

2 tablespoons arrowroot powder

2 teaspoons pure vanilla extract

1 tablespoon fresh lemon juice

1 tablespoon local honey

PREPARATION

Place rack in the middle of the oven; preheat oven to 350ºF. Line a 9-inch baking pan with parchment paper, lightly coat with Spectrum Organic All Vegetable Shortening (Non-hydrogenated).

Place sliced strawberries, arrowroot powder, vanilla and honey in a large bowl, toss gently to combine; set aside.

In a large bowl, add almond flour and salt, whisk togther. To that, add in coconut oil and honey; combine until mixture resembles crumbs; set aside.

Pour strawberry mixture into prepared pan, spread evenly. Add the topping over the fruit in an even layer.

Bake for about 20-25 minutes until topping is golden brown, remove from oven. Let cool for 10 minutes before serving with a scoop of frozen vanilla yogurt.
